Sweet Potato Roast Recipe

Sweet Potato Roast Ingredients

  • 4 large sweet potatoes, cut into 1-inch cubes (you can either peel them or leave the skins on, to your preference)
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper (optional, for a bit of heat)
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp maple syrup
  • Feta cheese (optional)
  • Fresh parsley, chopped (optional)

Sweet Potato Roast Instructions

Preheat the oven to 200°C.

In a large bowl, or your chosen baking sheet, toss the sweet potato cubes with the olive oil, sea salt, black pepper, rosemary, smoked paprika, ground cinnamon, and cayenne pepper if you’re using it. 

Spread the sweet potatoes evenly over a large baking sheet. Roast in the preheated oven for 25-30 minutes, tossing halfway through. They should be golden brown and turning crispy around the edges.

Once the sweet potatoes are roasted, drizzle them with the maple syrup. The heat from the potatoes will help the syrup coat them evenly, adding a touch of sweetness and a beautiful glaze.

Transfer the sweet potatoes to a serving platter and sprinkle with the toppings of feta and/or freshly chopped parsley for a burst of colour and freshness.
